New head chef for The Legacy Royal Victoria Hotel |

For the new head chef at a leading hotel in Llanberis, it is as if he’s stepped into a kitchen for the first time. Pete Hazlehurst’s enthusiasm for the industry has not faltered since he started out as a commis chef 25 years ago. His passion looks set to continue as he takes over the kitchens at The Legacy Royal Victoria Hotel, which recently underwent a £250,000 refurbishment. The 42-year-old will oversee the 100-seat Victoria and Padarn restaurants as well as the seasonal conservatory dining area at the three-star hotel. The father of 13-year-old Chloe and eight-year-old Britney, commutes from Tavin near Chester to the hotel, which sits on the edge of Snowdonia within 30 acres of gardens and woodland. He said: “I love this profession as no two days are ever the same and it is not a nine to five job. “There is an incredible buzz that I get working on a Saturday night when the restaurant is busy and the atmosphere is really buoyant and that has remained the same since I started out 25 years ago. “The Legacy Royal Victoria is a wonderful hotel which has a lot of potential and that is being brought to the forefront with recent investments.” Pete began his career as a commis chef in his native Wirral and he ran his own bakery called Crumbs before 3am early mornings took their toll and he returned to the hospitality trade. He later worked at venues including The Legacy Falcon Hotel in Stratford-upon-Avon and the Wild Pheasant hotel in Llangollen. Pete said he is looking forward to developing a modern continental menu at the hotel and praised the high level of produce available on the hotel’s doorstep.
